Ingredients

  • 4 cups all-purpose flour (480 g)
  • 1 teaspoon salt
  • 1 teaspoon curry powder
  • 1 cup (2 sticks or 16 oz) unsalted butter, cold
  • 1 cup (8 fl oz) water, ice-cold
  • 32 oz (900 g) minced beef
  • 1 teaspoon allspice
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup (6 oz) onions, chopped
  • Ground red pepper (to taste)
  • 2 teaspoons garlic, ground
  • 1 tablespoon thyme
  • ¼ teaspoon salt
  • 2 tablespoons tomato ketchup
  • 2 cups water
  • ½ cup onions, chopped
  • 1 beaten egg
  • 1 tablespoon water (for egg wash)
  • Additional water (for sealing)

Step-by-step

  1. Make the Pastry Dough:
In a large bowl, whisk together the flour, teaspoon of salt, and curry powder. Rub in the cold butter until the mixture resembles coarse crumbs with small pea-sized pieces.
Slowly add ½ cup (4 fl oz) of ice water, mixing with your hands until the dough begins to come together. Add more ice water 2 to 3 tablespoons at a time as needed to form a firm, but pliable dough.
Either divide the dough into two large discs, wrap in plastic, and refrigerate for 30 minutes; or cut into 10 to 12 smaller pieces, cover, and chill while preparing the filling.

  2. Prepare the Filling:
In a large bowl, combine the minced beef with allspice and black pepper, mixing well. Set aside.
Heat the vegetable oil in a skillet over medium-high heat until shimmering.
Sauté the chopped onions until translucent, then stir in ground red pepper, garlic, and thyme for about 1 minute. Add the seasoned beef and cook, breaking apart clumps, until no longer pink.
Mix in the ketchup and additional salt to taste. Pour in 2 cups water and bring to a boil. Reduce heat and simmer until the liquid reduces to a thick sauce.
Stir in chopped green onions, remove from heat, and let cool completely.

  3. Assemble the Patties:
Preheat your oven to 350°F (177°C). Beat the egg with 1 tablespoon water for the egg wash.
If working with large dough discs, roll out into a large circle and cut into 5-inch (12.7 cm) circles with a wide-rimmed bowl.
Place about 3 tablespoons of filling on one half of each circle. Moisten the edges with water, fold over, and press to seal. Crimp edges with a fork and trim any excess.
Alternatively, take pre-cut individual dough pieces, roll into 5-inch circles, and fill in the same manner.
Place the formed patties on a parchment-lined baking sheet.

  4. Bake the Patties:
Once all patties are assembled, refrigerate for a few minutes.
Brush each with the beaten egg wash.
Bake for approximately 30 minutes, or until golden brown.
Remove from oven, cool on wire racks, and serve warm.
